Any A series toyota motor is going to be the easiest to swap. The ZZ series motors are also not too hard and will mostly bolt up, though they require some fabrication. S series swaps are a pain and require lots of fabrication.
For a mk1 your choices really boil down to these:
-4age 20v
-4agze
-2zzge
-3sgte
These are the most common swaps (I'm guess the 2zz swap will get to be more common). I have them ordered from slowest to fastest, and also roughly cheapest to most costly. Making 200whp with the A series options will be tough.
