Exactly you always dyno in whatever gear is closest to a 1:1 ratio. Most 5speeds the gear that is closer to a 1:1 ratio is 4th gear.
Also the mk2 n/a exhaust is fine because its the same oem exhaust for the BEAMS. The only thing that i would change would be the na mk1 fuel pump but seems to be fine since you arent complaining about the fuel pump cutting out.
Heat shouldnt make that big of a difference. 160whp is the what most people should be getting but seems some people are low on power for various reasons. Big section to look at is your intake system. What position are you running the AFM? Are you using stock airbox? Aftermarket filter?
