I've got a JDM swap in my 2, and the oil level light is always on, even when I've just topped off. I looked at the oil pan, and like you said, no sensor.
So, i was wondering when you say "jumper the connector out", I assume you mean ground the wire, or some other type of thing. Could you go into more detail? Or tell me, without removing the bulb (i just put in, cuz the po had removed it

), how to stop it from coming on? Resistor? Ground?
