I found the gasket for it sitting on top of the fridge in the garage... Put it in, tightened 1/2 a dozen hose clamps or other areas where it was leaking, and haha now no leaks.

Moral of the story: (and purpose of sidetracking discussion) You definitely need that gasket to stop a water leak.
