Yeah you kinda do. On my racecars I completely removed the heater unit and there is nothing but pressed steel up front. To overcome fogging I went out and brought anti-fogging agent for the window and it works good. It still fogs sometimes on a really really cold day when I'm towing it but when I get there it clears up and then I'm good for the rest of the day.
The a/c helps defog but is not solely responsible for it, you will still be able to defog with the air alone, it will just take longer. Run some anti-fog stuff and keep the heater/blower unit and controls and you shouldn't have a problem.
