typically what happens is that there will be an air pocket in your coolant system.... it is those pockets that get hot and expand (coolant/water will expand, but not as much as air). So, when a hot spot comes through the extra pressure is released through the cap into the overflow tank....
further... make sure your overflow tank cap isn't on backwards (internally).
I use non-toyota thermostats all the time.... Toyota doesn't make them, they just buy them from a supplier.....
when you bleed your system, make sure you do it for a LONG time and/or use the proper techniques described online if you don't have an airlift tool.... air pockets hide quite well in these cars.....
