Infra red laser thermometer light

My car is not overheating. Changed both sensor t stat, rad, bleed coolant. Wen it spikes hot i use a ir themo. Its not overheating. Wierd. Im thinking is the gauge in car is bad or bad wire. Havent had time to do anything else. When it spikes just bang dash it drops back down to normal.
