eh, I wouldn't consider tossing a cage into the car hacking it up... but there can be many definitions thereof I guess

Nah, that's not... but when folks chop up the dash, strip everything from the interior that can humanly be removed then that's kinda hacking one up... especially if folks just take out only part of the dash to put in the cage (have seen it done in a few mk2's), and fun stuff like that. Technically that isn't hacking one up either (being as the body is still in tact) but it qualifies for me. Once there isn't a full dash in the car it looks hacked up to me, lol. Not that that's a bad thing either... heck, my trunk and frunk are bare metal with even the trunk carpet-holding brackets removed (firm believer in weight removal here, even in street cars).

The body mods on my current N/A and the paint job are worth more than what I've got in the whole rest of the car, so there's no way financially I could trade it (or would, too much time/effort in it) but if I run across a good t-top or sunroof car I'd definately consider swapping it for a hardtop. I'll keep an eye out. T-top cars pop up in the southeast (NC, SC, GA, FL) pretty frequently. (In fact I just ran across one a couple days ago local that I need to go check out) I don't go north of my state car shopping... I try to stay below the rust belt just to be safe.
