Welcome aboard.... You are definitely in the right place. Lots of very helpful people here. 800 seems good at normal operating temp.

The cold start/high rev thing is pretty normal. Just make sure that when it is warm it idles at 800RPM. It won't pass smog otherwise. It's nice to see another white MR2 with the blue interior. As for your last picture, use the search feature on the forum and look for "3 dash lights" or something similar. There are a couple of good threads about it. Good luck!

That's a good find, for $500. The part where you always have to warm up after it sits a couple of hours--sounds like it might be taking a long time to warm up, possibly your thermostat's stuck open. Not hard to fix, just make sure you use an oem thermostat and bleed the air bubbles out afterwords.
